Leekcake

Ingredients:
- 100g low fad quark
- 4 eggs
- salt
- 4 1/2 spoons olive oil
- 175g and 1/2 spoon of flour
- 3 teaspoons of baking powder
- 1 kg leeks
- 1 1/2 spoons butter
- 100ml milk
- 200g ricotta
- 60g pine nuts
- white peper
- nutmeg

Preparation:
Mix the quark, 1 egg, salt and 3 spoons of olive oil. Mix 175g flour with the baking powder and fold it in the quark. Wash the leeks and cut them. Heat the olive oil, add butter and leeks. Stew it for approx. 10 minutes. Dredge it with flour and add milk. Bring it to boil and let it cool down. Add now the ricotta, 3 eggs and pine nuts. Spice it with salt, peper and nutmeg. Preheat the oven to 200°C. Butter the baking tin. Roll the pastry, put it in the baking tin. Add the ricotta mixture. Dredge the cake with pine nuts and let it bake for 40 minutes.
