Mozzarella with figs

Mozzarella with figs

Ingredients:
- salt
- peper
- 50ml olive oil
- balsamic vinegar
- 4 bocconcini mozzarella 125g
- 4 figs
- 100ml white vine
- 1 cl white vine vinegar
- 10g sugar
- 2 twigs of rosemary and thyme
- 1 bay leaf
- 100ml of water

Boil the water, white vine, white vine vinegar, sugar, 1 twig of rosemary and thyme and the bay leaf. Prick the figs with a needle and put them into the liquid. Let it cool down and then put it in the fridge and let it steep for 8 hours. Heat the olive oil, add the rest of the herbs. Let this cool down and put it on the cut mozzarella. Let also this steep for 8 hours. Put it on a plate and serve it spiced with salt, peper, balsamic vinegar and a bit of herb oil.
