Aubergines with mozzarella

- 2 medium aubergines
- 3 tblsp olive oil
- ½ loaf of BRIMI mozzarella
- some oregano
- 1 tsp vinegar Balsamico
- vinegar
- salt

Wash thoroughly the aubergines and cut them into thin slices, salt and let them marinate for approx. ½ hour. Carefully dab them dry with kitchen paper, brush them with just a little bit of oil and roast them on both sides. Cover the aubergines with mozzarella slices, sprinkle oregano over them and put them into the hot oven till the mozzarella is warm. Beet olive oil with vinegar and a pinch of salt and drizzle the dressing over the aubergine mozzarella slices. Also delicious cold meal!
