Mozzarella with puree of beans
Ingredients:- grounded peper
- 2 Bocconcini Mozzarella 125g
- 300g green beans
- 1/2 onion
- 1-2 garlic cloves
- 2 spoons butter
- vegetable stock
- 100ml olive oil
- dried tomatoes
- basil
- salt
- green beans (for decoration)
Melt the butter and add onion, garlic and than the green beans. Stew them and add the vegetable stock. Let it cook for 10 minutes. Decant the beans and mix them until you have a puree. Let it cool down. Add slowly the olive oil. Put it again in the fridge. Approx. half an our before serving put it off the fridge. Cut the mozzarella and put it on the plate, add the puree and decorate it with dried tomatoes. Spice it with salt, peper, basil and olive oil.
