Sole filets with spinach and ricotta

Ingredients:
- 4 sole filets
- 1/2 garlic clove
- thyme
- 2 scallions
- 100g ricotta
- 200g cooked spinach
- salt, peper, nutmeg
- butter

Peel the scallions and cut them into cubes. Cut the spinach. Stew the scallions and the spinach. Spice it with salt, peper and nutmeg and add the ricotta. Cut the sole filets into 3 pieces and grill them in a pan with melted butter. Spice them with salt and peper. Add thyme and garlic and let it steep for 1-2 minutes.
