Stuffed Zucchini

Stuffed Zucchini

Ingredients:
- 4 courgettes
- salt
- 2 spoons lemon juice
- 200g rise
- 200g Mascarpone
- 2 eggs
- 150g nuts
- 100g raisins
- basil
- 4 pinchs of red peper
- 2 teaspoons of breadcrumbs
- 500ml tomatosauce
- 200ml cream
- 2 spoons tomatoes in cubes
- peper
- dill

Wash the courgettes and cut it into 10 cm pieces. Remove the kernel of the courgettes. Spice them with salt, peper and lemon juice. Put in a bowl the cooked rice, mascarpone, eggs, cutted nuts and the raisins. Spice it with salt, peper, red peper, lemon juice and basil. Add the breadcrumbs. Fill this in a piping bag and stuff the courgettes with it. Bake this in the oven at 190°C for 20 minutes. Heat the tomatosauce and add the cream. Spice it with salt, peper and red peper. Take out the courgettes and cut them in slices of 1 cm. Put the tomatosauce on the plate and add the courgettes. Serve it decorated with nuts and dill.
