Apple mozzarella with nut-flavored pesto

... 2 red South Tyrol apples (e.g. Jonathan or Elstar varieties), juice of 1/2 lemon, 150 g wild rocket with blossoms, 50 g dried walnuts, 60 ml olive oil, 1 garlic clove, rock salt, black pepper, balsamic cream, cornflower or speedwell petals.


Wash apples and cut in slices. Remove core. Sprinkle slices with lemon juice. Pick off rocket blossoms and put aside as a garnish. Wash rocket, remove coarse stems. Chop rocket, walnuts, olive oil and peeled garlic clove in a chopper or blender. Season with salt and pepper. Make small stacks of mozzarella slices, apples and pesto. Use blossoms and balsamic cream to decorate! Best served with white bread.
