At the very beginning were our farmers – and their shared desire to secure a fair and stable income. This was exactly why Milchhof Brixen was founded: to provide the farming families in our region with a reliable and sustainable livelihood.
Today, as then, Brimi stands for more than just dairy products: we represent an idea where economic success goes hand in hand with social responsibility, regional commitment, and sustainable development. Our products are the result of these values – and each one contributes to keeping our farming culture alive.
1969: Two Become One – The Founding of Latteria di Bressanone.
It all began in the 1920s, amidst the South Tyrolean mountain landscape. Fresh milk was refined at the small dairy cooperatives of Schabs and Brixen – with a lot of craftsmanship, passion, and the knowledge of many generations.
In 1969, these two businesses opened a new chapter: they joined forces and founded Milchhof Brixen, along with the Brimi brand, an abbreviation of Brixen-Milch. The idea behind it was as simple as it was powerful – to achieve more together, preserve the farming roots, and offer people the highest quality from the region.
A delicious idea becomes reality – the story of Brimi Mozzarella.
A milestone followed in 1978: Wolfgang Heiss, former president of the cooperative, and then director Luis Pichler put forward the undoubtedly bold idea to start producing mozzarella. The idea quickly gained unanimous support, and a daring investment of 121 million lire was made in a mozzarella production facility. Eight years later, production had already reached 1,000 tons per year. Today, it’s more than 310 tons per week. Mozzarella, ricotta, and mascarpone are now supplied to over 30 countries worldwide. Butter, milk, and cream are provided for the local market. What began as a bold step has become our trademark. Since then, we have been producing mozzarella and Italian fresh cheese specialties with passion and care, delighting connoisseurs far beyond South Tyrol.
What drives us to this day? Our connection to nature, close collaboration with our farming families, and the commitment to bring a piece of genuine South Tyrolean quality to the table every single day.
