Simply comforting: this colorful Buddha bowl delights with tender Mozzarella Armonia, crisp vegetables, and millet – light, balanced, and full of love for body and soul.

Here’s what you need:
For the Buddha-Bowl
  • • 4 packs of Brimi Mozzarella Armonia 100g
  • • 2 cups of millet
  • • 200 g spinech
  • • 2 corn on the cob
  • • 24 cherry tomatoes
  • • 32 snow peas
  • • 2 avocados
  • • 8 tbsp of chickpeas
  • • 8 tbsp pomegranate seeds
  • • 80 g of cashews
  • • salt
For the dressing
  • • 12 tbsp plain yogurt
  • • 8 tbsp native olive oil
  • • 4 pinches of cumin
  • • 2 tbsp flat-leaf parsley
  • • 2 tbsp mint
  • • lime
  • • salt
  • • pepper

Preparation

  1. First, rinse the millet well with water and place it in a pot. Add 1.5 cups of water and a pinch of salt. Bring the millet to a boil, then let it simmer on low heat for 5 minutes. Turn off the stove and allow the millet to sit for another 20 minutes.

  2. In the meantime, wash the spinach, wash and halve the tomatoes. Remove the avocado from its skin and cut it into thin slices. Cut the corn kernels off the cob. Toast the cashew nuts in a pan without any fat until golden brown.

  3. For the salad dressing, mix together yogurt, olive oil, cumin, parsley, mint, and lime juice, then season with salt and pepper. Tear the mozzarella into pieces. Do not discard the squeezed lime shell — keep it for serving the bowl.

  4. To assemble the Buddha Bowl, place the millet in a bowl and arrange the prepared ingredients on top. Spoon the yogurt dressing into the lime shell and place it in the center of the bowl. Serve immediately or pack it for takeaway.
